Against the dark backdrop of incense and oud, there's a ceaseless interplay of the other components. First, dusty saffron explodes in a powerful cloud, then shimmering pink peppercorns roll in like pearls. You feel the tickling edges of cumin and sugar as you sift them through your fingers. Ice-cold ginger, then turmeric, like a soft and smooth taste. A lingering river of caramel, a playful counterpoint to tart, juicy rhubarb, followed by a rinsing, almost piquant salt water infused with kumquat.
